ANCIENT TRADITIONS ALIVE

  • Sitting in a valley, mountains frame the Oaxaca City horizon alongside colorful colonial buildings, baroque churches, bustling markets, traditional arts and textiles, and an exquisitely complex cuisine with roots as ancient as its archeological sites. Home to 16 different indigenous groups, Oaxaca is the most ethnically diverse state of Mexico, asking for slow and attentive travel to understand its many layers, deep as the flavors of a mole negro. During our one-week immersion trip, we’ll venture into the heart of Oaxacan gastronomy and culture from an insider’s perspective, eating at upscale restaurants, street stands, markets, and even private homes for a deep taste of Oaxaca and its ancient culinary traditions.   • Ciudad de México (CDMX), formerly Distrito Federal, is one of the oldest cities in the Americas and a top cosmopolitan destination that welcomed over 40 million travelers in 2024. Dating back to 1325, when it was the ancient city of Tenochtitlán, this megalopolis that over 22 million people call home is a living palimpsest where multiple civilizations and cultures have collided over centuries, creating one of the most dynamic and exciting cities on earth. From its world class museums to its ancient canals to its renowned culinary scene, ranging from street stands to the most elevated restaurant experiences, this city has it all. During our one-week immersion trip, we’ll dive into the old and new, experiencing the ever-changing culinary and cultural traditions of the city from an insider’s perspective, eating at upscale restaurants, street stands, markets, and even a chinampa (or floating garden) for a deep taste of Mexico City.   • Chile is known around the world for its incredible natural wonders, from Patagonia to the Atacama Desert, with adventure seekers making the bulk of travelers who visit this corner of South America. Some also know about its incredible wines, but little is heard about the country’s cuisine even though Chile’s culinary landscape is as extensive as the country itself—the longest on earth. From indigenous Mapuche dishes to world-renowned restaurants to some of the most unique seafood anywhere to its incredibly varied produce as one of the most ecologically diverse countries, Chile is fertile ground for chefs to play around with and for you to discover. These are just a few of the reasons behind our decision to make Chile our first destination outside of Mexico, in partnership with celebrated Chef Pilar Rodríguez. During our nine-day immersion trip between dynamic Santiago and the award-winning wine region of Colchagua, relax at luxury hotels and explore Chile’s culinary and wine landscape from an insider’s perspective: eating at markets, lauded fine dining restaurants and even private homes, with multiple wine tasting experiences and meal pairings along the way for a deep taste of Chile.   • Step back into a time of mansion-lined boulevards in Mérida, the capital city of Yucatán state, where colonial grandeur mingles with thousands of years of Mayan history. Walk into a market for morning tacos to find piles of neon chiles and bags of recados (seasoning pastes) filling the air with rich aromas. Outside of Mérida, wander through the gardens of a former sisal hacienda, and admire the women’s embroidered huipiles in Magical Towns, a prestigious government designation for enchanting towns preserving their traditions. Brimming with ecological reserves, white sand beaches, cenotes (freshwater sinkholes), and marvelous archeological sites such as Uxmal and Chichen Itzá, Yucatán is rich in history and beauty. And nowhere is it more tangible than in its cuisine, mixing indigenous ingredients and techniques with those brought in with colonial times, trading ships, and immigration. During our one-week immersion trip, we’ll dive into the cultural and culinary traditions of the state from an insider’s perspective, eating at upscale restaurants, street stands, markets, and even a private hacienda for a deep taste of Yucatán.
